Apple Bread
Ingredients for apple bread:
1/2 cup margarine or butter
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup apples - peeled , cored and grated
Dash of cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 chopped walnuts or peacans
Directions: Preheat oven to 350 F . Grease one 9x5x3 loaf pan.
I usually start all my breads like this...Beat the eggs very well. I use a mixer and stop beating them only when they look like a mouse. Add the shortening, the sugar and beat together. Stir in grated apples with the juice.
After that you can prepare the dry ingredients. Mix the flour with the soda, salt and baking powder.Pour flour mixture into batter.Stir only untill it is moistened.Scrape into loaf pan.
Bake for 50 to 60 minutes or untill an inserted toothpick comes out clean.Let stand for 10 minutes, then remove from pan.Place on a rack to cool.
Healthy Variations:
I replace the white four with whole wheat flour and I added some rasins. It requires though the baking powder and at least 1 hour of baking. It has a country taste and it is very filling.
The fat free variation of the bread is very easy to make, you replace the shortening with fat free yogurt 200 grams (you choose your own flavour) or 1/3 cup vegetable canola oil. The yogurt could be fruit yogurt (peach or strawberry) . I found personally that the bread is les moisturized but it is fat free.
