Banana Bread Recipe
Ingredients for banana bread recipe:

2 eggs
1 cup white sugar
1 teaspoon baking soda
1 teaspoon baking powder
2 tablespoons shortening
3 bananas
2 coups of flour
Prepare the pan by greasing it with butter and flour.
Beat the eggs very well. I use a mixer and stop beating them only when they look like a mouse. Add the shortening, the sugar and beat together. Mash bananas one at the time.
Tip: I freeze my bananas and the advantage is they became soft and leave some water and that makes the bread very moisture.
After that you can prepare the dry ingredients. Mix the flour with the soda, salt and baking powder.
Bake the bread for an hour in a stove heated at 350 F. Check with a pick tooth to make sure it is ready.

Healthy Variations:
I replace the white four with whole wheat flour and I added a coup of blueberry. The taste was absolutely amazing. It requires though the baking powder and at least 1 hour of baking. It has a country taste and it is very filling.
The fat free variation is very easy to make, you replace the shortening with fat free yogurt 200 grams or 2 small containers of 100 grams each. The yogurt could be fruit yogurt (peach or strawberry) . I found personally that the bread is less moistured but has less fat.
