Dried Almond Biscotti
Biscotti are crunchy, traditional Italian cookies that often include fruit and nuts. Dipped in coffee or hot chocolate they are simply divine.
Ingredients for 20 servings:
2 Cups all or 500 ml - purpose flour
1 1/2 teaspoon baking powder
3/4 cup granulated sugar or 175 ml
I always use brown or molasses
1/4 cup or 60 ml unsalted butter
1 egg
1/2 cup milk
1 teaspoon vanilla extract
Option 1:
3/4 cup dried blueberries
3/4 cup unsalted blanched almonds
Option 2:
3/4 cup chocolate chip
3/4 cup cranberries
Preheat oven to 350 F or 180 degree. Combine the flour , sugar, baking powder and the butter in a food processor or you can use a wood spoon until everything looks crumby. Add the egg , milk and the vanilla extract. Mix again. Place dough in a bowl and knead with hands, adding blueberries and almonds (option 1 or 2). Maybe you will need to put more flour until the mix is not too soft or too though. Make two rolls 25 cm (10 in.) long. Place on baking sheet. Bake for 35 minutes on middle rack.
Remove from oven and let cool for 20 minutes. Slice diagonally into 2 cm (3/4 in.) slices using a sharp bread knife. Place slices on the same baking sheet and bake again between 160 -180 degree between 5-12 minutes on each side. This really depends on your stove and how hard you want the biscotti to be. So it is a good idea to check it .
Let cool on the rack
You can replace the almonds with as well with :
Dried apples and cinnamon
Dark chocolate and pistachios
White chocolate chips and orange zest
Anything delicious that inspires you!
After you finish them on one side you can put some melted chocolate that will dry and coat on one side.
I found this recipe in a Happy Holiday Dinning from IGA and I tried it and it turned out amazing.
I even tried with whole wheat and it was good but I would not recommend you do it for the first time. The dough will be heavier and requires lots of flour.
I even used the biscotti to make some Christmas gifs for my colleagues.
You can buy some nice glass containers from the Dolarama , with some nice ribbons and the effect is quite good.
