Carrot Bread
Carrot Bread Ingredients:
2 cups all purpose flour
1 tsp baking soda
1 tbsp baking powder
� tsp nutmeg
2 eggs
1 cup brown sugar
2 cups grated carrots
� cup raisins
� chopped walnuts - optional
1 tsp cinnamon
2 tbsp butter or 1/3 cup vegetable oil
� cup buttermilk
Mix together the flour, baking powder, baking soda, cinnamon and nutmeg and put aside. Those are the dry ingredients. In another bowl beat the eggs with sugar until they look like a mousse, add the butter or the shortening.Mix well.
Add the buttermilk then the dry ingredients, carrots, raisins and the nuts. Bake for 60 minutes in a loaf pan at 350F (sometime depending on the stove you may need to bake it for an extra 20 minutes )or until toothpick comes out clean.
