Chicken Quesadillas
Ingredients Chicken Quesadillas:
2 � cups of shredded Monterey Jack cheese
1 � shredded cooked chicken
4 whole wheat tortillas
2/3 cup salsa
Dipping Sauce:
1 cup salsa
2-3 tbsp sour cream
1/3 cheddar cheese
1 jalapeno chopped optional
� cup chopped fresh cilantro
Preheat oven to 400F (200C). Combine the salsa, sour cream and the cheddar cheese and put aside. In another bowl combine the Monterey cheese with chicken and salsa. Divide the mix in four parts and spread over half of each tortilla. Fold unfilled half of tortilla over filled portion and press together gently. Bake on a non-stick pan turning once for about 5-6 minutes per side .You can cook in a grill pan over medium heat for 2-3 minutes per side, Cut into slices and serve with the dipping sauce.
