Cranberry Scones Recipe

Ingredients for cranberry scones recipe:
 

 

1 cup butter or margarine softened

1 cup brown sugar

2 eggs

1 1/2 cups all purpose flour

1/2 teaspoon baking soda

1 1/2 teaspoon baking powder

1 cup cottage cheese

1 cup dry cranberry

1/2 cup sliced almonds or pecans � optional

1-2 tablespoons water

1 teaspoon vanilla extract

1 teaspoon grated orange peel

 

 

Preheat your oven to 350 degrees.

Cream the butter and sugar in a large bowl. Beat in eggs one at the time, mixing well after each addition. In a separate bowl combine the dry ingredients: flour, baking powder and baking soda . Stir the dry ingredients into butter mixture and add the cottage cheese, fruit, water, cranberry, vanilla and orange peel. Grease lightly a baking sheet and drop around 1/3 of a cup or take a big spoon for each scone. If the scones are big the baking time can go up to 25 minutes. After 15 minutes verify the scones with a toothpick that has to come out clean. Increase  the baking time with 5-10 minutes if it still has dough on it. It can vary a lot depending on your stove and the size of your scones.
