Couscous


Couscous is an ancient Arabic dish and you can use it in combination with meat.If you are a vegetarian this can be used as a stand alone meal.

  Ingredients for 8 portions:

1/2 cup chopped onions

1 clove garlic, minced

1 1/2 cup sliced mushrooms

1 cup chopped tomato

1/2 tsp dried oregano

1/2 tsp ground cumin

2 cups chicken broth low sodium/reduced fat

1/2 tsp crushed red pepper flakes

2 cups couscous

1/4 cup chopped fresh parsley

one hand of green chopped peppers

 

Spray medium saucepan with non-stick spray. Add onions, garlic,pepper and mushrooms. Cook and stir over medium heat until veggies are tender, about 5 minutes. Add tomatoes, oregano and cumin. Cook about 1 more minutes. Stir in chicken broth and crushed red pepper flakes. Bring to a boil. Stir in couscous and parsley.  Remove from heat . Cover and let stand for 5 minutes. Fluff with a fork before serving.
