Endive Soup


Ingredients Endive Soup:

8 endives cut in sections
3 tablespoons of butter
1 tablespoon of sugar
Chicken or chicken broth
2 peeled potatoes cut in dices - optional
1/2 cup fat free milk if you want the fat free version or
1/2 cup of 35% cream
salt and pepper
Chicken base , optional
2-3 carrots
1-2 parsnips
1-2 tablespoon chopped dill, optional


In a casserole melt 2 tablespoons of butter. Add the endives and the sugar( I use brown sugar. Cook for 10 minutes and mix from time to time.


Add the chicken broth or the chicken (2-3 chicken legs). Personally I boil the chicken for 2-3 minutes in another casserole until the fat comes off and then I added to the soup .You can add the potatoes, the carrots, parsnip, dill one by one.

I did the soup with and without the potatoes and I like it better without , also it has less carbohydrates in case you are on a diet, so less calories.Cover and let simmer for 30 minutes.


Remove from the stove and let it rest. You can pass it through the blender but that is also optional. In the photo I did not add yet the cream and I did not blend it.


Optional. Add the cream and mix well. Then add the rest of the butter. Serve. It makes 6 portions.
