Herb Turkey
12 lb turkey
1/2 cup butter, softened
2 tbsp garlic powder
2 tsp dried basil
1 tbsp dried rosemary
1 tsp ground sage optional
1 tbsp salt
1 tsp ground black pepper
2 cups water (2 tbsp chicken broth granules)
Preheat oven to 325F (165C).
Wash turkey inside and out. Pat dry. Remove any large fat deposits. Salt & pepper turkey liberally. Loosen skin from breast, thighs and leg. This is done by slowly working your fingers between breast and skin then slowly down thighs and legs being careful not to break skin.
Mix butter with herbs. Using your hand, spread half the butter mixture under breast skin and down thigh and leg. Rub remainder of mixture over the outside of breast.
Place turkey upside down (breast down) on rack in roasting pan. Add 2 cups of water to bottom of pan. Roast in preheated oven 3 to 3-1/2 hours or until internal temperature of bird reaches 180F (80C). Roast covered for the first 2 hours then continue roasting uncovered.
