Meringue Peanutbutter Cookies

Meringue is a type of dessert made from whipped egg whites and sugar. Some meringue recipes call for adding a binding agent such as cream of tartar or the cornstarch found in confectioner's sugar. Meringues are often flavored with vanilla and a small amount of almond or coconut extract. They are light, airy and sweet.

INGREDIENTS MERINGUE COOKIES:

2 white eggs

1 cup of sugar

2 tablespoons peanutbutter

2 tablespoons flour

Beat the white eggs very well for about 3 to 5 minutes. Add the sugar and beat them again for 30 seconds. Add gradually the penautbutter stirring constantly and then the flours. Grease and flour a 12 x 8 inch baking tray. Take with a spoon from the mix and put on the tray. You can shape into "nests" with a spoon or pastry bag if you want to be fancy.

Bake in a 350F (180C) oven for 8 to 12 minutes. If you like them crunchy/hard you can let them in the stove for 15 minutes.
