Potato Salad recipe

Ingredients potato salad

6 medium potatoes (2 pounds)

1 ¼ cups mayonnaise or salad dressing

1 tablespoon prepared mustard (optional)

½ teaspoon salt

¼ teaspoon pepper

1 cup thinly sliced celery (2 stalks)

½ cup chopped onion (medium)

½ cups chopped sweet pickle or sweet pickle relish

6 hard cooked eggs, coarsely chopped

Lettuce leaves

Paprika (optional)

In a covered saucepan cook potatoes in boiling water for 12 to 15 minutes or till just tender; drain well. Cool slightly. Peel and cube potatoes.

Meanwhile, for dressing, in a small mixing bowl stir together mayonnaise, mustard, salt and pepper.

In a large mixing bowl combine dressing, celery, onion and sweet pickle or pickle relish. Add potatoes and hardboiled eggs. Toss lightly to coat. Cover and chill for 6 to 24 hours.

To serve, line a salad bowl with lettuce leaves. Transfer the salad to the lettuce-line bowl. Sprinkle with paprika if desired. Make 12 side-dish serving.
