Pumpkin Bread
Pumpkin bread ingredients
1 ½ cup flour
1 cup brown sugar
1 tsp baking soda
1 tsp baking powder
1 cup grounded pumpkin (250 ml)
½ cup oil or 4 tbsp shortening
2 eggs
½ tsp cinnamon
½ tsp nutmeg
½ tsp vanilla
½ salt – optional
You can make your own pumpkin puree. Cut the pumpkin in 2 inches and boil in water until soft and then you mashed or put it a blender. You can bake the pumpkin as well but is taking more time. It has to stay in the oven at least 45 minutes at 350F. Then you puree it .
Combine the flower, sugar, baking soda and baking powder in a bowl. Set aside Beat the 2 eggs and add the grounded pumpkin, the spices and the shortening or oil. Combine the dry ingredients with the pumpkin mixture. If the mixture looks to dry add a little bit of water or milk (approximately 50 to 100 ml). Grease a loaf pan and the mixture. Bake 60 minutes at 350 F and check with a tooth pick that has to come out clean to make sure it is ready. For more pumpkin bread click here.
