Semolina Cake

Ingredients semolina cake:

1 cup of rough semolina flour

1 liter of milk

1/2 cup dry raisins

5 tablespoons of sugar

2 teaspoons of butter

4 eggs

4 tablespoons cacao

Put the milk to boil in a larger casserole and add the flour at the medium temperature. Occasionally stir. It should become thick once it starts boiling. Continue to simmer for approximately 15 to 20 minutes. Once it is getting thick set aside. Add the sugar and the dry raisins.

Separate the yolk from the whites and start beating the white until become like a mousse. Add the yolks and the white to the main composition.

Separate it in 2 or 3 parts and add the cacao

Butter a tray of 9 x 9 inches. It could be 10 x 10 as well.

Put the white first and then add the mix with the cacao in it. You can have the cake in 3 colors if you want with the cacao in the middle.

Bake at 300F or 150C for 50 to 60 minutes. Once you take it out you turn the cake upside down. You can serve it warm or chill in the refrigerator.
