Spinach Salad

Ingredients Spinach Salad:

1 package baby spinach
2 celery stalks, diced
1 cup cooked brown rice
1 cup sliced mushrooms
½ cup shallots diced
1 cup bean sprouts- optional
1 cup cashew nuts
1 tsp parsley


Sauce

¼ cup Soya sauce
½ cup olive oil (or canola oil)
1-2 cloves garlic, chopped finely

Mix all the ingredients and add the sauce. Marinate for 1 hour in a refrigerator before serving.
