Spinach Sauce
What you need for a Spinach sauce
1-2 spinach bags
1 cup flour
1-2 cloves garlic
1/2 tsp Salt
2 eggs
500 ml of milk
Wash the spinach very well and remove the core. Drain.
Put some water to boil in a pot and when it is boiling throw the spinach and keep it there for 5 minutes. Drain the spinach in a strainer.
You will need a plastic knife to chop it very well until the spinach is like a paste.
In sauce pan add the spinach finely grounded the flour, the garlic and the milk and simmer it at the medium temperature. Raise the temperature and bring it to boil. Add more milk if you find it is too thick. Once it is boiling simmer it for about 10 to 15 minutes until the color of the sauce became a dark green.
Add salt and pepper to your taste. When it is ready you can serve it with 2 poached eggs.
